Chubby Hubby Cookies



Just like the famous ice cream flavor, these chewy Chubby Hubby Cookies are loaded with chocolate, peanut butter, pretzels, and a hint of malt.  And just like their namesake, they'll have you coming back for more.  




A lot of people discover partying when they go to college, right?  Parents are far away, the rules seem more relaxed, and inhibitions drop.  It's the ideal time to try something new.  Be a bit rebellious.  

Well, my experience was a little different.  I went to college and discovered Ben & Jerry's ice cream. 


The meal plan at my college included a certain amount of "points" that could be spent at the on-campus coffee shops, convenience stores, or other a la carte dining spots.  These points could be spent any time you wanted a snack, but didn't need a full meal in the dining hall.  As I quickly learned, the on-campus convenience store stocked dozens of flavors of Ben & Jerry's ice cream.  I tried all the flavors, but Chubby Hubby quickly emerged as my favorite.  Sweet malted ice cream studded with chocolate-covered peanut-butter-stuffed pretzels.  The only problem was that the pints were too large to fit inside the freezer of the small dorm-sized refrigerators.  This was a situation which essentially forced you to eat the entire pint in one sitting.  After all, Ben & Jerry's is expensive, especially on a college student's budget.  You certainly don't want to waste the stuff. 

These cookies were inspired by the flavors in a pint of Chubby Hubby ice cream.  Chocolate malt peanut butter cookie dough is mixed with semisweet chocolate chips and pretzel pieces.  I originally intended these to be breakfast cookies (like this recipe), but my Chubby Hubby cookies ended up being far too sweet and decadent to qualify as breakfast.  I'm not complaining.  And if you want to eat them for breakfast anyway, I certainly won't judge.    

Ironically, these cookies are guaranteed not to make my husband chubby.  The man claims to dislike peanut butter in his cookies, or in any dessert.  He'll eat peanut butter on its own, but doesn't like peanut butter flavored desserts. Have you ever heard anything so ridiculous?




Chubby Hubby Cookies
(adapted from Mani Niall's Good Morning Baking)

Ingredients
  • 1 cup all-purpose or whole-wheat flour
  • 1 cup regular rolled oats
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1/3 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup chocolate malt powder (such as Ovaltine)
  • 2/3 cup peanut butter
  • 1 egg + 1 egg yolk
  • 2 tsp. vanilla extract
  • 2/3 cup chocolate chips
  • 1 cup miniature pretzels, broken into 1/2"-1" pieces
Instructions
1. Preheat oven to 350 degrees.  Line two cookie sheets with parchment paper. 
2. In a medium bowl, use a whisk to combine flour, oats, baking soda, and salt.  
3. In a large bowl, use hand mixer on medium speed to mix together butter, sugars, malt powder, peanut butter, eggs, and vanilla.  Continue mixing until smooth and creamy.  Add the dry mixture to the wet mixture, and stir together with wooden spoon until incorporated.  Add chocolate chips and pretzels and continue stirring.  
4. Use two large spoons to drop dough onto the prepared cookie sheets (I used a two-tablespoon coffee scoop to measure my dough so that all my cookies were uniform in size and shape).  
5. Bake cookies for 13-15 minutes, until slightly browned and crispy on the edges.  The center of the cookies may appear slightly undone; this is fine.  As soon as you remove cookies from oven, use the back of the spoon to press them down very slightly.  Allow to cool for 3-5 minutes on the cookie sheets, then move to a wire rack.  Stored in an airtight container, cookies will remain fresh for about 1 week.  

Yield: 22-24 cookies
